Healthy Oatmeal Fruit and Nut Muffins




This is a nice healthy alternative for a breakfast on the run that also gives you protein and a little surprise inside if you like cream cheese. I used pumpkin spice cream cheese since that’s what I had and what I like! These are good to freeze and pull them out when you need them too!

I adapted the recipe from All Recipes.

1 cup whole wheat flour
1 cup white whole wheat flour
1 1/4 cup oatmeal
2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1 cup honey
1 cup plain nonfat yogurt, I used Greek
3 eggs (1 whole, 2 egg whites)
1 tsp vanilla extract
1/2 cup shredded coconut
3/4 cup chopped nuts
1/2 cup dried fruit (raisins, cherries, apricots, prunes) use what you have on hand
1/4 cup flaxseed, optional
1/4 cup softened cream cheese, optional for filling

My batch yielded 2 dozen. Enjoy!
